Sweet and Spicy Chicken, Almonds and Mozzarella Salad!


I have been trying to eat healthier recently, and have stumbled upon a pretty easy-to-make and delicious salad that I thought I’d share.  One of the things that I love about it is that it's filling but it doesn't make me feel too full or tired afterward.  It is simple-- a sweet and spicy chicken breast, on romaine with mozzarella, and almonds. I happen to think that the oil and vinegar dressing that I used (see below) really adds to it as well. I received an oil and vinegar set from a place called "Cleo's" in Annapolis as a gift recently and I'm hooked now!  Please scroll down for the salad recipe. Sweet and Spicy Chicken, Almonds and Mozzarella Salad!



















Ingredients

1 Chicken Breast  (115 calories if you use half of a breast) 

1 tsp. Olive Oil   (45)

1 Clove of Garlic, minced

1/2  T. Cajun Spice

1 tsp Honey (21 calories)

1/8 C. Sliced Almonds (80 calories)

1/8 C. Mozzarella Cheese Shredded (86 calories)

1 T. Oil and Vinegar Salad Dressing (70)

2 C. Romaine Lettuce (18 calories)



Start by mixing 1 tablespoon of olive oil with the minced garlic, Cajun spice and honey. Baste the chicken with this and cook on medium-high heat to sear the meat. Then, place chicken breast in oven for 20 minutes at 425 degrees.

Slice chicken, add to lettuce and add remaining almonds, shredded cheese and salad dressing. Enjoy! This is a recipe for one. I actually use half of a chicken breast for the salad, and save the other half.  Total calories- 435
